Creamy Tuscan Chicken Soup with Gluten-Free Orzo – A Tasty and Easy Recipe

Ingredients
- 680 g of thin chicken cutlets
- Salt and black pepper
- 60 g of flour (classic or gluten-free)
- 2 tbsp extra virgin olive oil
- 2 shallots, chopped
- 4 cloves garlic, chopped
- 2 tbsp Italian seasoning
- 1/2 cup chopped sun-dried tomatoes in oil
- Pinch of red pepper flakes
- 3 cups reduced sodium chicken broth
- 1 cup raw potatoes, peeled and cut into chunks
- 3/4 cup heavy cream or canned coconut milk
- 1 tbsp Dijon mustard
- 3 tbsp lemon juice
- 1/2 cup grated Parmesan cheese
- 1 bunch Tuscan kale, roughly chopped
- Fresh basil

Instructions
- Season the chicken with salt, pepper, and Italian seasoning. Dredge the pieces in the flour, pressing to coat well.
- In the same pan, add 1 tbsp of oil and brown the chicken on both sides (3 to 5 minutes per side). Remove from the pan.
- Add the shallots and garlic and sauté for 2 minutes. Stir in the sundried tomatoes, Italian seasoning, a pinch of chili flakes, salt, and pepper. Cook for 2 minutes, then pour in the broth. Add the potatoes and chicken. Partially cover and simmer over medium heat until the potatoes are tender (10-15 minutes).
- Remove the lid. Add the cream, mustard, lemon juice, Parmesan cheese, and kale. Cook until the kale is tender (5 minutes).
- Serve the chicken topped with the garnished sauce. of fresh basil.
