This muffin recipe is made with textured vegetable protein, an interesting option for a satisfying and delicious snack! Containing Degla date sugar and Création Délicia date syrup, it is a gourmet option, rich in fiber, protein and that will delight you. Ingredients :
- 375 ml (1 ½ cups) textured vegetable protein (TVP)
- 310 ml (1 ¼ cups) whole wheat flour
- 60 ml (¼ cup) ground flax seeds
- 60 ml (¼ cup) of Degla date sugar from Création Delicia
- 10 ml (2 tsp) baking powder
- 5 ml (1 tsp) vanilla extract
- 310 ml1 (¼ cup) of 0% mg protein milk (such as Fairlife or Lactancia UltraPur)
- 310 ml (1 ¼ cups) plain 0% fat Greek yogurt
- 60 ml (¼ cup) Création Delicia date syrup
- 2 eggs
- 250 ml (1 cup) fresh strawberries, quartered
Preparation :
- Preheat the oven to 180°C (350°F).
- Using a food processor, reduce the TVP to a powder.
- In a large bowl, mix all dry ingredients.
- In another bowl, mix all the wet ingredients using an electric mixer until the mixture is smooth.
- Gradually add the dry ingredients to the wet ingredients, whisking until smooth.
- Gently fold in the strawberry quarters.
- Place paper or silicone molds in the twelve wells of a muffin pan, then divide the mixture among them.
- Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and let cool on a wire rack.
