Soft Strawberry Date Muffins

This muffin recipe is made with textured vegetable protein, an interesting option for a satisfying and delicious snack! Containing Degla date sugar and Création Délicia date syrup, it is a gourmet option, rich in fiber, protein and that will delight you. Ingredients :

  • 375 ml (1 ½ cups) textured vegetable protein (TVP)
  • 310 ml (1 ¼ cups) whole wheat flour
  • 60 ml (¼ cup) ground flax seeds
  • 60 ml (¼ cup) of Degla date sugar from Création Delicia
  • 10 ml (2 tsp) baking powder
  • 5 ml (1 tsp) vanilla extract
  • 310 ml1 (¼ cup) of 0% mg protein milk (such as Fairlife or Lactancia UltraPur)
  • 310 ml (1 ¼ cups) plain 0% fat Greek yogurt
  • 60 ml (¼ cup) Création Delicia date syrup
  • 2 eggs
  • 250 ml (1 cup) fresh strawberries, quartered

Preparation :

  1. Preheat the oven to 180°C (350°F).
  2. Using a food processor, reduce the TVP to a powder.
  3. In a large bowl, mix all dry ingredients.
  4. In another bowl, mix all the wet ingredients using an electric mixer until the mixture is smooth.
  5. Gradually add the dry ingredients to the wet ingredients, whisking until smooth.
  6. Gently fold in the strawberry quarters.
  7. Place paper or silicone molds in the twelve wells of a muffin pan, then divide the mixture among them.
  8. Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and let cool on a wire rack.
