Gluten-Free Orzo with Asparagus and Meatballs

Ingredients (4 servings)

  • 200 g Creation Delicia gluten-free orzo
  • 300 g of minced meat (beef, veal or chicken) shaped into balls
  • 1 bunch of asparagus, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 cups vegetable or chicken broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon of salt
  • Pepper to taste
  • ½ cup grated Parmesan cheese (optional)
  • Zest and juice of one lemon
  • 2 tablespoons chopped fresh parsley

Preparation of Orzotto with Asparagus and Meatballs

  • Wash and cut the asparagus into pieces of about 3 cm. Thinly slice the onion and chop the garlic.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 2 minutes. Add your ground meatballs and season with paprika, oregano, salt, and pepper. Cook, stirring, until the meatballs are golden brown. Set aside.
  • In the same pan, add the garlic and sauté for 1 minute. Stir in the gluten-free orzo and lightly toast for 2 minutes to enhance its flavor. Stir in the broth and bring to a boil. Reduce heat and simmer, covered, for 10 minutes, stirring occasionally.
  • Add the asparagus and continue cooking for 5 minutes, until the orzo is tender and the broth is well absorbed.
  • Return the meatballs to the pan and mix well. Add the lemon zest and juice.
  • Sprinkle with Parmesan cheese and fresh parsley before serving.

Tips for this recipe
