Risotto recipe reinvented with gluten-free orzo for an easy-to-prepare and nutritious orzotto

Ingredients (4 servings)

- 200 g Creation Delicia gluten-free orzo
- 300 g of minced meat (beef, veal or chicken) shaped into balls
- 1 bunch of asparagus, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 cups vegetable or chicken broth
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1 teaspoon dried oregano
- ½ teaspoon of salt
- Pepper to taste
- ½ cup grated Parmesan cheese (optional)
- Zest and juice of one lemon
- 2 tablespoons chopped fresh parsley
Preparation of Orzotto with Asparagus and Meatballs
- Wash and cut the asparagus into pieces of about 3 cm. Thinly slice the onion and chop the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 2 minutes. Add your ground meatballs and season with paprika, oregano, salt, and pepper. Cook, stirring, until the meatballs are golden brown. Set aside.
- In the same pan, add the garlic and sauté for 1 minute. Stir in the gluten-free orzo and lightly toast for 2 minutes to enhance its flavor. Stir in the broth and bring to a boil. Reduce heat and simmer, covered, for 10 minutes, stirring occasionally.
- Add the asparagus and continue cooking for 5 minutes, until the orzo is tender and the broth is well absorbed.
- Return the meatballs to the pan and mix well. Add the lemon zest and juice.
- Sprinkle with Parmesan cheese and fresh parsley before serving.
