Bsissa , a product of Tunisian soil, an art of eating, a therapy, a whole culinary heritage.

The first recipe for Bsissa is said to have been created during the Byzantine Empire (some mosaics incorporating the bsissa have been found in Tunisia). Taken up over the centuries by all levels of the Tunisian population, it is now served at lunch, as a dessert or even as a main meal and is attracting more and more people around the world!

In the Bedouin tradition, Bsissa was recommended to travelers and pilgrims because it is highly nutritious and offers a high quantity/nutrition ratio! It is also widely used during Ramadan to facilitate fasting.

The artisanal recipe of Bsissa has been passed down from generation to generation so that today we can enjoy its nutritional richness. It is usually eaten for breakfast with a few dates which makes this combination a very energetic, delicious and sustaining dish.

Components and nutritional characteristics of bsissa

Bsissa is a vegan, raw, complete and energetic food, a clever blend of grains, roasted legumes, flavors and spices. It is succulent, filling and nutritious.

The presence of legumes and cereals in this culinary cocktail makes Bsissa rich in vegetable proteins, fibers, slow sugars, trace elements, mineral salts and polyphenols. Also rich in calcium, phosphorus and iron, it is excellent for the growth of children.

The aromatic spices used in this mixture provide fresh, invigorating, sweetening, astringent, anti-inflammatory flavors and rich and varied scents, which stimulate the appetite and promote secretions that contribute to good digestion. The composition of the Bsissa

Bsissa is made from roasted cereal flour, seasoned with marjoram, coriander, anise and fennel and is prepared with olive oil. The presence of legume flour (chickpeas, flax, lentils) with the richness in fiber of its 14% of its ingredients, facilitates intestinal regulation. Bsissa is rich in vitamins and minerals. It is suitable for diabetics (rich in slow sugar) and it is an appetite suppressant par excellence. It is also available in a gluten-free version.

How to consume Bsissa

Bsissa is consumed in the form of a paste mixed with olive oil and sugar or honey and your choice of nuts, or in the form of a refreshing drink in summer, obtained after diluting the powder in water and ice cubes to which we add our favorite fruit or sugar. Bsissa is generally served for breakfast but can very well be consumed as a dessert!

Preparation of the bsissa, our suggestions:

In smoothie: Use our new ready-to-drink mixes based on bsissa and transform your busy mornings! Three great flavors, plus a gluten-free version, to discover and which are prepared simply by adding milk (or vegetable milk). A complete breakfast and a delicious drink for athletes that is also perfect for children.

Breakfast cream: Mix 2 tablespoons of Bsissa flour with 10 ml of olive oil and a little water. Sweeten with honey, maple syrup or other liquid sugar. Sprinkle with nuts if desired and make it your complete breakfast with your favorite cup of coffee or our caffeine-free beverage Coeur de dattes !

Energizing and refreshing protein drink: 2 tablespoons of Bsissa flour, 250 ml of cow's milk or vegetable milk, sweeten with date syrup, maple syrup, honey or other sugar, add ice cubes, mix and enjoy.

Energy ball: Mix Bsissa flour with olive oil, dried fruits, pieces of dates, make succulent balls.

Fruit dip: Mix 2 tablespoons of Bsissa flour with a little olive oil.
