Harissa Berber:

Real name, Ommik Houria, this spread made from fresh carrots, peeled, diced and mixed for a rich and creamy texture seasoned with spices, is a must-have in Tunisian cuisine. Whether you use it to spread your hot breads, garnish your starters, your sandwiches (or even your meats), whether you add it to your salads, or simply, this puree will add a little spicy touch to any meal !

Use as a spread on toast or as a starter with tuna, hard-boiled eggs, sandwich breads, olives and salads.

Spicy Chakchouka Ratatouille:

Also called Chakchouka in Tunisia (the word is said to be of Berber origin which means "mixture"), ratatouille is a traditional culinary specialty of North African, Nice, Provençal and Mediterranean cuisines. Made from a simmered stew of Mediterranean vegetables and olive oil, ratatouille is perfect to serve as a main course or as a side dish. It is as tasty for breakfast as it is for lunch with a salad.

Like a spicy vegetable stew, it can be eaten with hot crusty bread or even on pasta or in a soufflé. In salad, in a marinade, in a tagine, with a shrimp stir-fry, with grilled fish or meat, this condiment will be an ally for your many recipes!
